Long, long time ago, probably during the zaman paleolitik, food was cooked over a naked fire, without any equipment save for a twig which acted as a roast. But.. what exactly is an induction cooker, and how does it work? Let’s find out now together! 😊
What Is An Induction Cooker?
An induction cooker is a cooker that heats your cooking equipment electrically by magnetic induction, instead of by radiation or thermal conduction from an electrical source or from a flame itself. In other words, an induction cooker heats your cooking equipment directly instead of heating the cooktop as well. As a result, the cooktop will not get too heated – the heat largely focuses on the cooking equipment itself.
How Does An Induction Cooker Work?
(We’ll try to keep it as simple as possible for you without being too scientific!) An induction cooker has a coil of copper wire beneath the ceramic plate. When a pot/pan is placed on it, an alternating electric current is passed through the wire. This results in an oscillating magnetic field, which indices a magnetic flux and produces an eddy current. The eddy current that flows through the resistance of the pot/pan heats it in turn. (And we’ll stop here at the explanation before you get a headache.)
😎 Fun fact: not all cooking equipment is made equal – only equipment made of ferrous metal will work on induction cookers. A simple test is to see if a magnet will stick to the bottom of your pot/pan. If the answer is yes, it will work on an induction cooker!
💡 Note: According to CDA, an eddy current is a current that circulates in conductors, and has been induced in a conductor by a varying magnetic field. In layman’s terms, Eddy currents are loops of electrical current the are created in the conducting material by a magnetic field that changes from positive to negative. The current is created by changing the magnetic field.
How To Use An Induction Cooker?
The very first thing you should do is to test your pots and pans to see if they can be used on an induction cooker. You can use the simple magnet test to check your existing pots and pans. If most of them aren’t magnetic, then you’ll have to replace them.
Once you’ve got the right cooking equipment, the rest is easy! Simply turn on your induction cooker, place your equipment on the stove, and start cooking. The induction cooker will heat up your pot/pan instantaneously. Since it’s more heat-efficient, time your cooking properly to avoid overcooking your food. Generally, induction cookers take less time to cook compared to other types of cookers. 👍
Induction Cookers vs. Gas Stoves
Induction cookers are safer than gas stoves in general, plus they do not produce as much heat waste. Plus, they are more heat-efficient as well, as 90% of heat reaches the cooking equipment compared to gas stove’s 65-70%. Furthermore, gas cylinders are bulky and heavy, making it cumbersome to lug in and out of the kitchen. 😱
However, most chefs still opt for the good ol’ gas stove as they are familiar enough with it, and are more confident seeing and controlling the flames.
